Cucumber-Kale Smoothie

This refreshing smoothie is a delicious way to get a serving of vitamin-packed dark, leafy greens. And it's as easy to prepare as it is healthful. Serve it at your next brunch or luncheon; the cucumber, ginger, lime juice and green apple make it especially refreshing on a hot summer day.


  • 1 cup kale, stemmed
  • ½ cup fresh parsley
  • 1 cup cucumber, chopped
  • ½ inch ginger, peeled
  • 2 green apples, cored
  • 2 teaspoons lime juice
  • 1 ½ cups ice
  • 1 ½ cups water


  1. Place all ingredients in a blender.
  2. Blend until all ingredients are thoroughly incorporated into a smoothie-like consistency.
  3. Enjoy!

Boost the protein content of this drink by substituting skim milk or Greek yogurt for the water.
