Fresh, healthy and easy to make, a loaded Caprese salad is the perfect summer dish. Bring it as a side to your next socially distanced gathering, or enjoy it for lunch or dinner on its own.

Ingredients

  • 1 cup cherry tomatoes, halved
  • 1 cup cucumber, chopped
  • 1 cup sweet peppers, chopped
  • ¼ cup green onion, chopped
  • 3-4 tablespoons basil, chopped
  • ½ cup mozzarella, diced (or pearls)
  • 1 can chickpeas, drained and rinsed
  • ¼ cup pesto sauce

Instructions

  1. Combine all ingredients in a large bowl. Mix until well combined.
