Health Information Recipe for Mashed Sweet Potatoes

Mashed Sweet Potatoes*

  • 3 large sweet potatoes
  • 1½ teaspoons vanilla extract
  • ⅛ teaspoon ground cinnamon
  • ⅛ teaspoon ground nutmeg
  • 1 tablespoon margarine

1. Wash and dry sweet potatoes and pierce on all sides with a fork.

2. Microwave on high for approximately 15 minutes or until soft.

3. Cut potatoes in half lengthwise and scoop the meat out into a medium mixing bowl. (Discard potato skins.)

4. Mash the potato pulp with a potato masher or fork until smooth.

5. Add remaining ingredients and mix well

This recipe makes approximately five servings.
